amount = Menge (nicht stueckweise zaehlbar), e.g. amount of money
number = Anzahl (zaehlbar), e.g. number of dollar bills

Unterschied wie im Deutschen:
Amount = Menge --
Number = Anzahl

But what about "volume"? I think I've heard it for countable and incountable things, but I'm not sure.

Uncountable only, unless you can think of a counterexample, but this is slightly off-topic as it doesn't relate to numbers, unless you're thinking of something different than I imagined.

Ich habe hier bei uns schon öfter den Begriff "customer volume" gehört, wenn von der hohen Anzahl der Kunden in unserer CDB gesprochen wurde. Die Kunden sind an sich zählbar, andererseits ist die zahl wiederum so groß, dass man die Kunden vielleicht eher als "Masse" ansieht ;-)
