    Furthermore, "stricken" comes from "strike" = hit. So, if you are grief-stricken you have been hit by grief; to say food-stricken would mean to be hit by food. Besides, as Selkie already said, we use it primarily for feelings: grief-stricken, terror-stricken, horror-stricken. Though land can be stricken with drought or plague.

    In addition to "hit", you could use "struck" (not stricken): 25 million people have been struck by/with food shortages.

    I certainly agree with ##1 & 2, however, it might be well to point out that "betroffen" could be translated as affected by. Word choice here depends in part on how it flows in the sentence:

    "In Asien sind an die 25 Millionen Menschen von drastischer Nahrungsmittelknappheit betroffen, aber auch Europa bleibt nicht verschont, wenn sich der Klimawandel fortsetzt."

    In Asia, nearly 25 million people are affected by drastic food shortages; but Europe will not be spared if climate change continues.
